Creamy Portuguese Rice Pudding

The recipe for creamy Portuguese rice pudding was adapted from Book C.traditional portuguese osigna, its author – Maria de Lourdes Modesto. The book was published in the 80s of the last century, the circulation is no longer published, but it can be found in second-hand bookstores. This is probably the best book on Portuguese cuisine. The author traveled to all regions of Portugal, researched the recipes of each region and talked a lot with local chefs. To show you how to prepare each of the recipes, the photographs in the book show their authors by the backyard fireplace or in front of the wood-burning stove. It’s not so important to cook all the recipes, but to appreciate how the kitchen turns out. Very beautiful.

The following creamy Portuguese rice pudding recipe is easy to make, but I found it a bit large so the amount of ingredients was halved. But it will be duplicated. I think it’s important to remember that the best rice for this type of recipe is collared rice because it absorbs milk better. Since I am not very fond of oil, I used coconut oil. And since this is a Portuguese rice pudding recipe, there is no coconut milk on its ingredient list.


Servings: 4 small servings

Cooking time: 10 minutes.


  • 250g rice or Brazilian legumes or rice for risotto
  • 600 ml water
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable fat / oil or coconut fat
  • 300 ml whole milk + if necessary
  • 100 g sugar
  • 1 cinnamon stick
  • grated half lemon zest


  • Boil water with salt and vegetable fat / oil or coconut oil. Add washed and dried rice and cook for about ten minutes.
  • Add cinnamon stick, grated lemon zest and milk. Cook over very low heat, stirring frequently, until the rice is very soft and the broth thickens. This is easy to verify. The broth should cover the back of the wooden spoon and clear a path with your finger. It takes a good half hour. If it thickens, gradually add another half cup of milk.
  • Turn off the heat, cover the skillet and wait for it to warm up and thicken. Transfer to a bowl when it is almost cold. Sprinkle with cinnamon before going to the table.


In addition to the rounder-grain catheto rice, risotto types are also used for risotto, and the two varieties of carnaroli and arborio are most suitable for making Portuguese rice pudding, as they are high in starch. … Therefore, the texture of the dessert remains very creamy during cooking.

Method Media Bermuda will present the documentary FABRIC: Portuguese History in Bermuda on Thursday, December 29 at the Underwater Research Institute of Bermuda.

A spokesperson said: “Method Media is proud to bring Bermuda Fabric: Portugal History to Bermuda for its 5th and 6th showing at the Bermuda Underwater Observatory. In November and December 2019, Cloth: A Portuguese Story in Bermuda had four sold-out screenings. Now that Bermuda has reopened after the pandemic, it’s time to bring the film back for at least two screenings.

Maestro de Braga is the first Portuguese in the National Symphony Orchestra of Cuba.

Maestro Filipe Cunha, Artistic Director of the Philharmonic Orchestra of Braga, has been invited to conduct the Cuban National Symphony Orchestra, as announced today.

According to a statement sent by O MINHO, “he will be the first Portuguese conductor to conduct this orchestra in its entire history.”

In addition to this orchestra, the maestro will also work with the Lyceo Mozarteum de la Habana Symphony Orchestra.

The concerts will take place on 4 and 12 March 2023 at the National Theater of Cuba in Havana.

In the words of the maestro, quoted in the statement, “these will be very beautiful concerts with difficult but very complex pieces” and therefore he feels “very motivated”.

From the very beginning, Rachmaninoff’s Piano Concerto No. 2 will be performed by an Italian pianist (Luigi Borzillo), whom the maestro wants to bring to Portugal later this year. In the same concert, Mendelshon’s First Symphony will be performed.

Then, at the second concert, in the company of the Mexican clarinetist Angel Zedillo, he will perform the Louis Sfora Concerto No. 2. In this concert, the maestro also conducts Tchaikovsky’s Fifth Symphony.

“This is an international recognition of my work. An invitation that I accept with humility and great responsibility. I was surprised to learn that I would be the first Portuguese member of the Cuban National Symphony Orchestra. This is a very great honor,” the maestro said in a statement.

“I take with me the name of the city of Braga and Portugal with all the responsibility that goes with it, and I hope to do a good job there, leaving a good image and putting on great concerts. These will be very special concerts because, in addition to performing pieces that I love, especially Rachmaninov and Tchaikovsky, I will be directing two wonderful soloists who are also my friends.
