Kabuki arrives in Lisbon and gives Japanese cuisine a Portuguese flavor.
Chef Andrés Perede, 10 years ago in Valencia, moved to Lisbon after the summer, with enough time to get to know the city, the culture and, above all, the national gastronomic identity, to comfortably prepare the installation of the first kabuki. outside from Spain. The restaurant opened a few days before Christmas, in line with the soft opening strategy of a space that wants to become the benchmark in Portugal in this type of cuisine that combines Japanese and Mediterranean cuisine. But the intention is to gradually highlight the Portuguese-Japanese creations.
Located in the renovated galleries of the Four Seasons Ritz, the Kabuki Lisboa offers three separate spaces. On the ground floor, there is the main hall, which seats 72 people, where you can taste the tasting menu (from 100 to 130 euros per person) and à la carte meals.
Here you can sample some of the most iconic Kabuki dishes such as fried egg nigiri and white truffle pate, nigiri toro al pastor and nigiri tartar steak, as well as various usukuri such as usukuri pa am tomaka or usudukuri de shrimp, or even dishes … like oxtail with teriyaki sauce.
On the middle floor is the Kikubari Bar, run by the bartender Guilherme Godinho, with a variety of cocktails that can be accompanied by snacks such as oysters, caviar, homemade pickles and kabuki prego.
On the top floor there will be a separate room for 30 people. This is the Kabuki Experience, a more intimate space with an exclusive menu that begins with a tribute to tuna, one of the pillars of Japanese cuisine.
“The three Kabuki Lisboa spaces have been designed to provide a diverse gastronomic experience with a particular focus on wine harmonization,” explains José Antonio Aparicio, President of the Kabuki Group, quoted in a statement that also guarantees the opening of the terrace. opposite the restaurant overlooking Edward VII Park in the spring.

Chef Andrés Pereda, who joined the Spanish group in 2008 after working for the last 10 years at Valencia, will ensure that the Kabuki brand is maintained despite the intention to create new and exclusive dishes with ingredients and a national flavor.
After two years as a sommelier at Alma, a Lisbon restaurant with two Michelin stars, Filipe Wang moves to Kabuki, where, as Chief Sommelier, he will ensure that the wine offer complements the gastronomic creations. With 350 appellations, Kabuki Lisboa focuses on champagne (with 150 varieties), Burgundy wines, Riesling, sake and sherry, but also wants to highlight Portuguese wines, offering among others ports, Madeira, exclusive verticals from small national producers.
The tea collection is also extensive, and in collaboration with the national producer, an exclusive Kabuki Lisboa tea is planned to complement the craft beer and Jerez wine created by the group’s sommelier.
Room service is managed by the restaurant manager Victor Jardim.

The entire space in the iconic Lisbon site was designed by the architect Maurice Sainz. The furnishings are elegant and clean, with a play of light and color, enhanced by the work of designer Carlota Pereiro.

Method Media Bermuda will present the documentary FABRIC: Portuguese History in Bermuda on Thursday, December 29 at the Underwater Research Institute of Bermuda.

Maestro Filipe Cunha, Artistic Director of the Philharmonic Orchestra of Braga, has been invited to conduct the Cuban National Symphony Orchestra, as announced today.
According to a statement sent by O MINHO, “he will be the first Portuguese conductor to conduct this orchestra in its entire history.”
In addition to this orchestra, the maestro will also work with the Lyceo Mozarteum de la Habana Symphony Orchestra.
The concerts will take place on 4 and 12 March 2023 at the National Theater of Cuba in Havana.
In the words of the maestro, quoted in the statement, “these will be very beautiful concerts with difficult but very complex pieces” and therefore he feels “very motivated”.
From the very beginning, Rachmaninoff’s Piano Concerto No. 2 will be performed by an Italian pianist (Luigi Borzillo), whom the maestro wants to bring to Portugal later this year. In the same concert, Mendelshon’s First Symphony will be performed.
Then, at the second concert, in the company of the Mexican clarinetist Angel Zedillo, he will perform the Louis Sfora Concerto No. 2. In this concert, the maestro also conducts Tchaikovsky’s Fifth Symphony.
“This is an international recognition of my work. An invitation that I accept with humility and great responsibility. I was surprised to learn that I would be the first Portuguese member of the Cuban National Symphony Orchestra. This is a very great honor,” the maestro said in a statement.
